Planting Arugula

To speed up germination, soak the arugula seeds in water for a few hours before planting. Plant seeds 0.5cm (1/4") deep, 2cm (1") apart with 20cm (8") between rows. Arugula prefers well-draining soil rich in organic matter, and thrives in full sun, but will also tolerate partial shade.

Growing Arugula

Once seedlings develop true leaves, thin them to be at least 10cm (4") apart. Keep the soil moist but not wet, as insufficient or inconsistent watering can cause arugula to bolt to seed. Row covers can help provide needed shade in warmer areas, as well as protection from pests such as cabbage moths or slugs.

Harvesting Arugula

Harvest leaves as you need them once they reach roughly 5cm (2") long, cutting the outer leaves to promote more new growth. Arugula leaves will become tougher with a stronger flavour if left to mature further.
