Planting Oregano
In colder areas, start oregano undercover 6-8 weeks before your last frost date, or grow from cuttings. Plant seeds 0.5cm (1/4") deep, 5cm (2") apart, with 40cm (16") between rows if starting outdoors. Oregano prefers well-draining soil rich in organic matter, and thrives in full sun.
Growing Oregano
If oregano was started undercover, once the last frost has passed, harden off seedlings by putting them in a safe place outside for two hours, increasing by one hour every day for a week. Once acclimated to the outside conditions, plant each oregano seedling at least 25cm (10") apart and water in well. If started in the garden, thin to allow 25cm (10") between seedlings once they develop true leaves. Once the oregano reaches 10cm (4") tall, lightly trim to encourage the plant to bush out. Oregano requires less watering than many herbs; a deep watering less often is preferred, and be sure not to let the soil dry out. Avoid fertilising, as this will cause the leaves to have less flavour.
Harvesting Oregano
As soon as oregano is 15cm (6") tall, it can be harvested for its leaves. Cut leaves as needed, prioritising the older leaves to encourage new growth, and leave enough for the plant to recover and regrow. The flavour will be at its strongest right before flowering begins.
